Peach Pecan Ice Cream
I absolutely love ice cream. It is definitely my favorite dessert and I can come up with almost any excuse to buy some! It is also great anytime of the year. So as the peaches turn ripe this season I thought what I perfect thing to mix peaches and ice cream. I hope you enjoy.
What you'll need
-6 cups of vanilla ice cream
-2 cups chopped peaches
-2 tablespoons sugar
-1 cup chopped pecans
-Bread pan
Directions
-1. Leave ice cream out to soften for about 5 minutes. 2. Chop peaches into small squares put in microwaveable safe bowl and put the sugar on top of peaches and microwave for 30 secs. 3. Take out to cool completely. 4. Chop about 1 cup of pecans and set aside. 5. Scoop about 6 cups of ice cream into bowl, mix on low for a minute. 6. Pore in peaches and pecans and mix on low. Should be soft and well mixed like a milkshake. 7. Pore into bread pan (or any pan with straight edges.) 8. Let freeze for about 3 hours. 9. Enjoy.
I lined the bread pan with wax paper. I thought this was a good idea but its not. Once you get to the bottom of the pan it rips and you could end up with pieces of chucks in the ice cream. Ew. So doesn't use wax paper like I did. The ice cream is super good. It is already gone and I made it yesterday!It's the perfect summer treat.
