These are a super healthy snack for late night or in the morning. Personally I enjoy one of these bars with a cup of tea or glass of milk in the morning for breakfast. They are so yummy and only have 110 calories. What more could you want? My mom has also been really into drying fruit lately so I had most of the ingredients on hand!
Directions
1. Preheat oven to 350 degrees F. And line 9x9 pan with nonstick foil. 2. Beat 1/3 c. honey, 2 eggs, and 1/2 tsp salt with a fork in a bowl until blended. 3. Put 1/2 cup of each: nonfat dry milk, pumpkin seeds, shredded coconut, ground flaxseeds, dried apricots, dried cherries, flour in blender and pulse until everything is finely chopped. 4. Put honey mixture and dry mixture in a large bowl and mix until even moistened. 5. Spread evenly in baking pan, pressing down lightly and sprinkle 1/2 cup chocolate chips on top. 6. Bake until center is set about 20 minutes. 7. Let cool for 5 minutes then take out of pan using foil and place on cooling rack for about 10 minutes. Cut into 20 bars. Enjoy.
