Mint Cookies- 2 ways

I was feeling minty one day and wanted to make mint cookies. It must be the Christmas season approaching so I googled "mint chocolate chip cookies" and the recipes were either for chocolate cookies with mint chip or a recipe that the base was "Betty Cocker Sugar Cookie pouch." I thought what is this about? I can't find a recipe that is all from scratch. So I decided there was only one thing to do. Make my own green mint cookies recipe all from scratch.  And the cookies turned out so good! I made them two ways. Mint Oreo and Mint Chocolate Chip. Enjoy.

Ingredients
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons peppermint extract
1 teaspoon green food coloring

Since I made these cookies 2 ways. I mixed all the ingredients above together then split the dough in half. So I made a half batch of each type of cookie.
Cookie 1: Mint Chocolate Chip Cookies
Add 1 and 1/2 cup chocolate chips to the half batch.
Bake at 350 for about 10 minutes or until edges are golden brown.

Cookie 2: Mint Oreo Cookies
About 20 Oreos crumbled into this half of the mint batter.
Bake at 350 for about 10 minutes or until edges are golden brown.

I also recommend trying covering a whole Oreo with the chocolate chip mint cookie dough. It wont turn out very pretty but it will taste good!

  3. Yummm. Both of these sound amazing. I could definitely go for some minty goodness. I'll have to give these a go. Have you ever made mint chocolate cupcakes? I use mint extract and crushed up candy canes in the batter. SO GOOD!
