Chocolate Mint Chunk Cookies

I have been wanting to make these cookies for a while now. I found a bag of Andes mint baking chips and knew that I had to buy them so I could bring them home and put them in a wonderful cookie recipe.

You'll need
1-1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup Hersey cocoa powder
1/2 cup (1 stick) unsalted butter, room temp
1/2 cup sugar
1/2 cup brown sugar
1-1/2 teaspoons vanilla
1/3 cup milk
1 bag of Andes mint baking chips

Directions
1. Preheat oven to 325 degrees. Mix butter, sugars, vanilla, baking soda, salt in a mixing bowl until well mixed. 2. Alternate putting milk in and cocoa and flour. Once those are all mixed in put in mint baking chips. 3. I put the dough in the freezer for about 10 minutes to harden up a little. 4. Place spoonfuls of dough onto a cookie sheet that is lined with parchment paper. 5. Press down a little on each ball of dough. 6. Bake for 12-13 minutes or until set. Makes a little over 2 dozen.

These cookies honestly turned out better then I thought! They are so good. You can't eat to many at a time because the mint and chocolate is so rich but I think that is part of the reason they are so good!!

  6. These look scrumptious! I lived in Seattle for 12 years but moved back to New York a number of years ago. I still have a lot of friends that live out there. If you are ever in Seattle check out Eat Local, my friend shop it is a wonderful concept.
