Oatmeal Banana Muffins

These are a must try! Do I say that about all the recipes I post on here? Anyways these are a perfect breakfast muffin. There is no white flour or sugar in these which is great. The chocolate chips adds the perfect amount of sweetness. I have eaten one of these for breakfast the past few mornings and I am telling you they are delicious! Heat them up in the microwave for 20 seconds and the chocolate will be a little melted and perfect. But please don't take my word for it, go make them and eat them up.
You'll need
5 cups oatmeal
2 cups ripe bananas
1 tsp salt
5 tbsp liquid sweetener (honey, pure maple syrup) 
1 cup water
1/4 cup coconut oil
2 1/2 tsp vanilla extract
2/3 cups chocolate chips
1/3 cups walnuts

1. Preheat oven to 380 degrees F. 2. Mix all wet ingredients well. Then gradually add dry ingredients until everything is mixed. 3. Place dough in cupcake/muffin baking cups inside a muffin tin. 4. Bake for about 17 minutes. 5. Makes about 15-17 muffins. 

Add ons: You can add cinnamon. Shredded coconut. Blueberries. If you would like instead of chocolate chips or nuts.

I added blueberries to some of the muffins instead of chocolate chips at my mom request. They weren't my favorite, I much prefer the chocolate chip ones for sure. But my mom really liked them so that is an option too! Enjoy.

  8. YUM! My little boy is the pickiest eater, but he loves bananas (probably more than anything) so I love this healthy alternative to normal muffins. I am going to have to try these!
